Tips for cooking and baking with erythritol

In contrast to sweeteners that many people consider unacceptable alternatives to sugar due to having their own flavor or posing health concerns, erythritol has only one slight disadvantage: It is only 70% as sweet as sugar. This can of course be corrected by using larger amounts. There are a few things to note when cooking and baking with Xucker Light. Crystalline erythritol is suitable for making cheesecake, but for regular cake batter or shortcrust, you should use the Powdered Xucker version. Or you can mix it with xylitol in a 1:1 ratio. For making preserves, it can only be used in small amounts, otherwise it crystallizes upon cooling. But erythritol is perfect for preparing drinks and desserts.
